package repos: update for upcoming PVE 8 and Ceph enterprise repo

Browse Source 
Switch overt to Bookworm / Proxmox VE 8 repos, drop older Ceph
Pacific and Octopus repos, mention the ceph enterprise repo and add
the old repos entry for the wiki
